I wanted a healthy snack one day and I already knew that rice cakes are great light snack. But I know what you’re thinking, how can you make this cardboard NOT taste just like cardboard. (I said the same thing, haha). So what do I do when I need a yummy recipe? I go to Pinterest and hope to goodness that I don’t get sucked into the black hole of Pinterest. With that said, that’s when I found this totally addicting peanut butter banana rice cakes drizzled with honey.
When I made these for myself, just like every other time I find something yummy and the kids caught me. They wanted some as well. But this was a fun way they could get in the kitchen with me and help me make this yummy treat.
Who knew you could make cardboard taste good, haha. This makes for a good snack, breakfast, lunch. It’s perfect for kids and adults. They make for one healthy midnight snack. Sometimes I find myself up late working on the blog and it’s perfect for that, rather than snacking on some un-healthy chips or such.

Ingredients:
• 1 diced banana
• teaspoon of honey
• 2 rice cakes
• 2 spoonful of peanut butter
Directions:
• Grab two rice cakes (mine are lighted salted kind – Quaker)
• Spread peanut butter or almond butter on rice cakes
• Add sliced bananas (7 fit perfect)
• Drizzled honey/cinnamon on top (your choice)

This is brilliant. I never would have thought to do this. Peanut butter and banana though what could be better? Add honey and it’s the perfect combo on anything but rice cakes are just genius! I will need to try this!
I’ve always ate bananas and peanut butter before on regular bread, which is really good by the way.
I have this for breakfast and sprinkle cinnamon on top, So good!
There are few things that can beat peanut butter and bananas. I’ve never made rice cakes before but I’ll have to now for the peanut butter and bananas. I’ve got everything but the honey which I’ll pick up on my next shopping trip, then I’ll see how yummy these are. They sound amazing. Thanks for the recipe.
I saw this earlier and made it for my 6 year old just now. She is officially in love and wants it for lunch “every day until they don’t go grow rice cakes anymore.” Thank you, thank you, thank you for officially making my nighttime lunchbox assembly so much easier!! That is, if they don’t get too soggy overnight- have you ever pre-made them?
YAY that’s so awesome! Yea my kids are in love for this, they’re always asking for rice cakes now.. who would of known? I haven’t tried making it the night before yet.. I assume the bananas would get all brown if you pre-slice them. That’s a good question though.
Those sound so delicious! I never thought to use rice cakes to make a snack like this! I love that it all healthier foods and would be filling, this would make a great breakfast too.
I’m so glad that rice cakes have evolved through the years, from hard-to-gnaw, curiously-textured things, to be light and airy, yet satisfying crunchy, healthy snacks. I enjoy them, since as you said, they’re nice and healthy. And I’m sure to enjoy them with bananas, PB, and honey as you’ve suggested! Honey is such a great partner for PB; I love it. I love adding PB and bananas to EVERYTHING. I have done this with rice cakes, and even cereal bars. My daughter now tells me that she can’t eat PB without bananas, so I think I’ve created a monster!
I have all of the ingredients except rice cakes! My son would LOVE this though. He is way into peanut butter and bananas (he calls them NANAS), but I haven’t thought to combine the two together. It would be an easy snack too!
I love the combination of banana’s, peanut butter and honey. I make a chocolate smoothie with frozen bananas, raw honey, and PB2. It is so delicious. Sometimes I will put the goodies on a piece of toast. I love it when the PB gets all melty. I have done this on top of rice and popcorn cakes before. It is a good way to spruce them up with some healthy goodies.
I am a huge fan of rice cakes, but have never thought to top them with peanut butter and bananas before. I also love the thought of adding the drizzle of honey on top. I am really curious how all of this tastes now.
Yummm! The caramel rice cakes are like gods gift to earth. They are amazing with a nice layer of peanut butter!! I have not tried bananas on top, but I imagine it would be delicious! Also, the additional drizzle of honey is probably awesome.
Mmmm, simple and nutritious. My kind of recipe. My kids love rice cakes and I love that they are so portable. Also they make lovely edible plates, lol. And anything peanut butter is a hit with my kids.

Very healthy and yummy. The flavors are go very well together and the crunch of the rice cake would add, too.
I love Rice cakes my kids do not they think they are stale but I am sure that might think differently with the pb and banana on top
